02 - In a large mixing bowl, combine rolled oats, chopped nuts (if using), baking powder, ground cinnamon, and salt. Whisk briefly to distribute evenly.
03 - In a separate medium bowl, whisk together milk, maple syrup, eggs, melted butter, lemon zest, vanilla extract, and fresh lemon juice until completely smooth and well blended.
04 - Pour the wet ingredients into the dry ingredients. Stir with a spatula or wooden spoon until just combined, being careful not to overmix.
05 - Gently fold in the blueberries using a light folding motion to distribute them evenly without crushing the fruit.
06 - Transfer the mixture to the prepared baking dish and spread evenly with a spatula. Sprinkle the top with coconut sugar or brown sugar if using.
